The magic begins with the basics, which is the quality and simplicity of our food. Aqua e Grano in Italian is simply “water and wheat,” which is where things all begin. Our pizza dough is naturally leavened and wild-fermented sourdough and crosses between Neapolitan and New York styles. It has the foundation of the Neapolitan, with the crispy, thin-crust of the New York style. All of our ingredients are fresh, organic, local, and seasonal. We take those excellent ingredients and blend them into an innovative and creative offering. Along with our gourmet pizza offerings, we feature sides that complement the experience, such as the freshest garden salads, cheese boards, freshly baked focaccia bread, and indulgent desserts. Everything is brought together with hand-crafted love and created in the finest artisanal manner.

Meet The Chef: Fredrick Bijou
With over 15 years of hospitality and foodservice experience, Fredrick Bijou is proud to deliver the ultimate pizza experience with his visionary offering Aqua e Grano. Inspired by the desire to disrupt the foodservice industry, Fredrick has provided a concept that brings a gourmet pizza operation into a social space of your choice and creates an unforgettable experience. All that is required is that you schedule an event, pick the location, and Fredrick and his team deliver the rest, leaving you completely free to relax and enjoy the excellent food and atmosphere.
Hospitality-focused, dedicated to excellence, and extremely knowledgeable are just a few terms most often used to describe Fredrick. From an early age, this Brooklyn native has been fully immersed in the hospitality and foodservice industry. His father, an energetic and successful chef in Brooklyn started Fredrick in the business at the young age of 15. His mother embodied hospitality and regularly hosted gatherings at home, where Fredrick absorbed the importance of making people feel welcome. These two environments gave him his strength of character and strong desire to create warm, inviting atmospheres where people could relax and enjoy themselves.
Fredrick went on to build a career in hospitality, working in every restaurant position, from server and bartender to ultimately the role of general manager of a fine dining establishment in TriBeCa. The pandemic pushed Fredrick to explore his skills as a restaurant entrepreneur, which eventually led to the birth of Aqua e Grano, a grand pizza experience celebrating the best ingredients, hospitality, and service to the greater New York City region.
